Instant Pot Pork Loin

This recipe cooks a boneless pork loin roast in an Instant Pot, producing tender and juicy sliced pork with a seasoned crust. A blend of garlic, onion, smoked paprika, salt, and pepper coats the pork, which is browned before pressure cooking with vegetable broth. This results in a flavorful roast with moist meat.

Description

Instant Pot Pork Loin involves seasoning a 2-pound boneless pork loin with garlic powder, onion powder, salt, black pepper, and smoked paprika for a balanced savory and smoky flavor. The pork is seared on all sides using the Instant Pot's sauté function to build a browned crust, which adds depth of flavor.

The roast is then pressure cooked with vegetable broth for 20 minutes and allowed to release pressure naturally before slicing. This cooking method keeps the pork moist, tender, and flavorful. Resting the meat before slicing lets the juices redistribute, resulting in juicy slices about 3/4 to 1 inch thick.

This pork loin works well as an entrée served with sides like vegetables or potatoes. The recipe advises checking for an internal temperature of 145℉ to ensure safe doneness without overcooking, which can dry the meat.

Tips include storing leftovers in an airtight container with some juices for a few days refrigerated or freezing for up to 3 months. Reheating gently on the stove with a lid helps retain moisture. The notes also explain safe internal temperature ranges indicating that pork can have a pink center if it reaches 145℉.

Ingredients

Servings
  • 2 lb pork loin roast boneless
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper ground
  • 1 tsp smoked paprika
  • ½ c. vegetable broth

Instructions

  1. In a small bowl combine the garlic powder, onion powder, salt, black pepper and smoked paprika. Season the entire pork roast with spice mixture.
  2. Set Instant Pot to Saute. When setting reads HOT, add oil.
  3. Add pork and brown on all sides, about two minutes per side.
  4. Cancel Saute setting on Instant Pot.
  5. Add vegetable broth to Instant Pot and scrape anything that’s on the bottom of the pot from sauteing the meat to prevent burn warning.
  6. Add pork to Instant Pot, fat side up. Close the lid with the pressure vent closed and set Instant Pot to manual for 20 minutes.
  7. When time is up let the Instant Pot natural release for 5 minutes then manually release any more pressure.
  8. Open lid, remove pork and set on cutting board. Check to make the internal temperature is 145 degrees F. Let pork loin rest for additional 3 minutes.
  9. Slice into 3/4'' - 1'' pieces and serve.

Notes

  • Store leftovers in an airtight container with some cooking juices refrigerated for a few days or freeze for up to 3 months.
  • Reheat pork slices gently in a covered pan on medium heat to prevent drying out.
  • Cook pork fat side up and reach an internal temperature of 145℉ for safe, juicy meat.
  • Allow pork to rest before slicing to keep it moist and flavorful.
  • Slice pork into pieces about 3/4 inch to 1 inch thick for serving.
