Ingredients
- 2 lb pork loin roast boneless
- 2 Tbsp olive oil
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt

- ½ c. vegetable broth
Instructions
- In a small bowl combine the garlic powder, onion powder, salt, black pepper and smoked paprika. Season the entire pork roast with spice mixture.
- Set Instant Pot to Saute. When setting reads HOT, add oil.
- Add pork and brown on all sides, about two minutes per side.
- Cancel Saute setting on Instant Pot.
- Add vegetable broth to Instant Pot and scrape anything that’s on the bottom of the pot from sauteing the meat to prevent burn warning.
- Add pork to Instant Pot, fat side up. Close the lid with the pressure vent closed and set Instant Pot to manual for 20 minutes.
- When time is up let the Instant Pot natural release for 5 minutes then manually release any more pressure.
- Open lid, remove pork and set on cutting board. Check to make the internal temperature is 145 degrees F. Let pork loin rest for additional 3 minutes.
- Slice into 3/4'' - 1'' pieces and serve.
