Instant Pot Pork Verde
Description
Instant Pot Pork Verde involves seasoning cubed pork with salt and pepper before searing it in olive oil on high heat in the Instant Pot. After browning, white onion, minced garlic, cumin, sliced jalapeño, and salsa verde are added. The pressure cooker seals and cooks the pork quickly, developing tender meat infused with bright, tangy salsa verde and mild heat from jalapeño.
The dish offers a well-seasoned, moist pork with a flavorful green sauce that pairs well with corn tortillas, rice, chips, or as a filling for burritos. Toppings like sour cream, cheese, and fresh cilantro can add creaminess and freshness to the serving.
The recipe also notes that it can be adapted for slow cooker use, though the Instant Pot approach shortens cook time while preserving texture and flavor.
Ingredients
- 3 lbs boneless pork loin or shoulder, cubed
- 2 tablespoons olive oil
- 1 cup white onion chopped
- 3 cloves garlic minced
- 2 cups salsa verde
- 1 jalapeño halved with seeds removed and then sliced
- 1 teaspoon cumin
- salt
- black pepper
Instructions
- Season cubed pork with salt and pepper.
- Add olive oil to the Instant Pot and set to saute. Adjust to the highest setting and let it heat up for 4-5 minutes. Add cubed pork and sear for 2-3 minutes on each side.
- Add onions, garlic, cumin, jalapeno, and salsa verde. Seal pressure cooker, bring to high pressure, and once ready, cook for 25 minutes. Allow pressure to release naturally.
- Remove pork and sauce from pot top and with sour cream, cheese, fresh cilantro. Serve with fresh corn tortillas, over rice, wiht your favorite chips, or in burritos!
Notes
- Searing the pork before pressure cooking enhances flavor through browning.
- For a slow cooker alternative, cook the pork and ingredients on high for 3-4 hours or low for 6-8 hours.
- Serve with sour cream, cheese, and fresh cilantro to complement the pork verde.
- Use fresh corn tortillas, rice, or chips to enjoy the dish as tacos, burritos, or a plated meal.
