Description

This recipe uses pork shoulder cut into large pieces, seasoned with salt, garlic, chili powder, and cumin, and combined with bay leaf and red chile sauce in an Instant Pot. Cooking under pressure for 45 minutes tenderizes the meat and infuses it with spice. After pressure cooking, the canned hominy is stirred in and heated through to complete the soup.

  • 5-6 pounds pork shoulder cut into large chunks
  • 1 bay leaf
  • 1 tablespoon salt
  • 1 tablespoon garlic minced
  • 3-4 cups water
  • 1 Red Chile Sauce 28 oz can, Las Palmas brand, not enchilada sauce
  • 1 tablespoon red chili powder
  • 1 teaspoon cumin
  • 1 white hominy 29 oz can, drained
  • toppings optional
  • red onion diced
  • Mexican oregano or cilantro
  • radish sliced
  • lime or lemon wedges
  • cabbage shredded

Instructions

  1. Remove pot liner 
  2. Cut meat into chunks and add to pot
  3. In a small bowl combine the salt, garlic, chili powder and cumin
  4. Pour red chile sauce over meat. Add water (3-4 cups) to cover the meat. Make sure to leave a couple of inches from the top.
  5. Sprinkle with spice mixture
  6. Add bay leaf
  7. Return pot liner to Instant Pot, close the lid and lock in place
  8. Make sure the steam release knob is in the sealed position
  9. Turn setting to Manual (pressure cook) button and turn to 45 minutes
  10. When cooking cycle is done, let the pot set undisturbed while it naturally releases the pressure. 
  11. Manually release the remaining pressure by release the steam knob. 
  12. Open lid and add hominy, stir in completely to heat through.
  13. Serve immediately with toppings if desired
  14. Store leftovers in refrigerator
