Instant Pot Shrimp Scampi

This recipe prepares shrimp scampi with angel hair pasta in an Instant Pot by combining chicken broth, white wine, lemon juice, olive oil, garlic, and butter. The pasta cooks submerged in the flavorful liquid with shrimp placed on top, steamed under high pressure for a brief 3 minutes. Fresh parsley and Parmesan cheese garnish the dish, complementing the bright, savory sauce with subtle acidity and rich umami.

Description

Instant Pot Shrimp Scampi brings together a blend of chicken broth, white wine, lemon juice, olive oil, minced garlic, and butter to form a bright, savory cooking liquid. Dry angel hair pasta is broken in half to fit in the pot and submerged fully in the liquid to ensure even cooking. Raw, shelled, and deveined shrimp are placed on top before sealing and cooking under high pressure for a brief 3 minutes, making the pasta tender and the shrimp just cooked without overcooking.

After a quick pressure release, fresh parsley is stirred in and freshly grated Parmesan cheese added for a finishing touch. The result is a flavorful, light sauce coating the tender pasta and plump shrimp. The lemon juice and white wine bring acidity and brightness, balancing the richness of butter and olive oil.

This preparation suits quick, one-pot meals and can be served as a light dinner or elegant lunch. The dish pairs well with a simple green salad or steamed vegetables. Freshly grated Parmesan enhances the flavor with its savory notes.

Use dry pasta suitable for pressure cooking and ensure it is fully submerged to cook evenly. Frozen shrimp can be used without adjusting cook time. For other pasta types, adjust the cooking time accordingly and consider cooking the shrimp separately to avoid overcooking. Freshly squeezed lemon juice is preferred, and moderately acidic white wines like Pinot Grigio work well. Reheating should be gentle to preserve shrimp texture.

Ingredients

Servings
  • 1 ¾ cups chicken broth
  • ¼ cup white wine
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tsp garlic minced
  • 2 tbsp butter cold
  • ½ tsp salt
  • 8 oz angel hair pasta dry
  • 1 lb Shrimp raw, shelled, deveined, medium
  • cup parsley
  • Parmesan Cheese for serving

Instructions

  1. Pour your 1 ¾ cup chicken broth, ¼ cup white wine, 2 Tbsp lemon juice, 2 Tbsp olive oil, 2 tsp minced garlic, 2 tbsp of butter, and ½ tsp salt into the Instant Pot.
  2. Use your hands to break 8 oz dry angel hair pasta in half so that it can fit in the liner. Place the dry pasta in the liquid in the Instant Pot, using a wooden spoon to make sure that the noodles are submerged under the liquid.
  3. Place 1 lb frozen shrimp on top of the noodles.
  4. Put the lid on the Instant Pot and secure it. Turn the pressure to HIGH and cook for 3 minutes. When the cooking cycle has completed, perform a Quick Release.
  5. Open the lid of the Instant Pot and stir. Chop up ⅓ cup parsley and mix it into the noodles. Sprinkle with parmesan cheese before serving. Enjoy!

Notes

  • Completely submerge dry pasta in the Instant Pot liquid to ensure even cooking of noodles.
  • Frozen shrimp can be used without altering the 3-minute cook time.
  • Use dry angel hair pasta; adjust cooking time if using different types.
  • Freshly grated Parmesan enhances flavor and texture when sprinkled before serving.
  • Freshly squeezed lemon juice and Pinot Grigio white wine contribute best to the sauce’s brightness.
  • If using a different pasta with longer cook times, cook shrimp separately to avoid overcooking.
