Instant Pot Sloppy Joes
Description
This recipe begins by browning 93% lean ground beef in the Instant Pot on sauté mode, seasoned with salt and black pepper. After draining fat, the beef is removed temporarily while onions, garlic, and green bell peppers are sautéed until softened. The browned beef is returned to the pot with ketchup, tomato paste, brown sugar, and prepared mustard mixed in.
Pressure cooking on high for five minutes with natural release allows the flavors to blend and thicken into a tangy, slightly sweet sauce coating the beef. Serving suggestions include topping buns with the sloppy joe mixture, shredded cheddar cheese, and pickles for added flavor and texture.
The recipe notes mention the suitability for meal prep, recommending making a large batch to serve over several days. Sloppy Joes also work well over brioche buns or macaroni noodles and can be frozen in airtight containers for up to a month for convenience.
Ingredients
- 2 lbs ground beef 93% lean
- 2 tsp kosher salt divided
- 1 tsp black pepper freshly ground
- 1 medium onion chopped
- 1 large green bell pepper seeded and chopped
- 2 TB olive oil
- 4 cloves garlic minced
- 2 cups ketchup
- 6 oz tomato paste
- 2 TB brown sugar packed
- 1 TB prepared mustard
- cheddar cheese shredded (cheddar), for serving
- pickle
- bread bun
Instructions
- Turn Instant Pot to sauté mode. Add ground beef, 1 tsp kosher salt, and black pepper. Cook until browned. Drain if desired. Transfer to a bowl and set aside.
- Continuing in sauté mode, heat oil until very hot. Add onions, garlic, green peppers, and remaining 1 tsp kosher salt. Cook until onions are soft, 2-3 minutes. Add the browned beef back into the pot. Turn sauté mode off.
- Stir in the ketchup, tomato paste, brown sugar, and mustard to combine well. Cover tightly and pressure cook on high for 5 minutes. Let pressure cooker "natural release" for 12 minutes. Manually release the remaining pressure and carefully open lid. Stir and serve warm, with desired garnishes.
Notes
- Sloppy Joes can be made in large batches and stored for meal prep throughout the week.
- Serve on hamburger or brioche buns or over cooked macaroni noodles for variety.
- Store cooked and cooled sloppy joe mixture in airtight containers and freeze for up to one month.
- Return to refrigerator overnight to thaw before reheating, or gently reheat directly from frozen.
- Adjust seasoning as needed after reheating to refresh flavors.
