Description
Instant Pot Spare Ribs and Rice features pork spare ribs cut into manageable pieces and marinated with a blend of black bean sauce, soy sauce, Shaoxing wine, ginger, garlic, sesame oil, sugar, white pepper, and optional fish sauce. Marinating for at least 30 minutes allows the ribs to develop a deep, rich flavor.
The marinated ribs are placed in the Instant Pot with a layer of jasmine rice on top before adding water. Cooking under high pressure for 13 minutes with a natural release melds the flavors while producing tender ribs and perfectly cooked rice. The method ensures the rice absorbs the savory marinade without becoming mushy.
After cooking, the ribs and rice are gently mixed, then garnished with finely sliced green onions. Adding chopped Thai chili is optional for those who prefer some heat. This dish serves as a complete meal combining protein and starch in one convenient pot, offering a balanced and flavorful home-cooked option.
Using pre-cut spare ribs from Asian markets saves prep time, but otherwise, ribs can be chopped before marinating. Adjust seasoning after cooking to taste. Serve immediately for best texture and flavor, as reheating may dry out the ribs.
Ingredients
- 1 pound (454g) pork spare ribs , cut into pieces
- 1 tablespoon (15ml) neutral cooking oil generic cooking oil
- 1½ cup (345g) jasmine rice , rinsed
- 1½ cup (375ml) water cold
Black Bean Marinade
- 1.5 tablespoon (22.5g) black bean sauce
- 1 tablespoon (15ml) soy sauce regular
- 1 tablespoon (15ml) Shaoxing wine or water
- 1 tablespoon (15g) ginger , grated
- 3 (14g) garlic minced, cloves
- 1 teaspoon (5ml) sesame oil
- 1 teaspoon (4g) sugar
- A pinch white pepper
- 1 teaspoon (5ml) fish sauce (optional)
Garnish
- green onions , finely sliced
- 1 Thai chili , finely chopped (Optional)
Instructions
- Marinate Spare Ribs: In a mixing bowl, marinate spare ribs with Black Bean Marinade for at least 30 minutes and up to overnight in the fridge.
- Pressure Cook Spare Ribs and Rice: Mix marinated ribs with 1 tbsp (15ml) oil, then place in Instant Pot. Try to fill the whole Instant Pot bottom with a single layer of spare ribs. Then, layer 1½ cup (345g) Jasmine rice on the spare ribs. Add 1½ cup (375ml) cold water. If the rice is rinsed, drain well and use 1 1/4 cup (310ml) cold water instead. Ensure all the rice are submerged in liquid. Pressure cook at High Pressure for 13 minutes, then 10 minutes Natural Release.*Pro Tip: Ensure spare ribs are at the bottom, then rice on top.
- Season and Serve Instant Pot Spare Ribs and Rice: Fluff and gently mix the spare ribs and rice. Taste and season with more salt or soy sauce if necessary. Garnish with finely sliced green onion. Add Thai chili to spice it up! Serve immediately. :)
