Description

Chicken bouillon and a bay leaf add further seasoning layers.

  • 1 lb green split pea dry
  • 1 tsp olive oil
  • 2 carrot peeled and diced, large
  • 1 onion diced, medium
  • 1/4 cup celery diced
  • 2 cloves garlic (minced)
  • ham bone leftover
  • 6 cups water
  • 1 tbsp bouillon Better Than Bouillon or 1 cube
  • 1 bay leaf
  • 4 ounces ham diced, leftover
  • chives chopped for garnish

Instructions

  1. Rinse peas under cold water.
  2. In a pressure cooker, add oil, onions, carrots, celery and garlic and saute 4-5 minutes. Add ham bone, peas, water, chicken bouillon and bay leaf. Cover and cook high pressure for 15 minutes. Let the pressure release naturally then open, remove the bone and bay leaf and stir, the soup will thicken as it stands.
  3. Saute the ham on a hot skillet if desired and use for garnish on the soup with chives.
  4. To make without a pressure cooker, add 2 more cups water and simmer covered on low for 2 hours.

Notes

  • Check labels of ingredients such as bouillon for gluten-free certification if needed.
  • The ham bone is key for flavor, but diced ham is used as garnish and can be sautéed separately for a slightly crispy texture.
  • For a longer but traditional method, simmer on low heat for 2 hours with extra water to achieve similar tenderness and flavor.
