Instant Pot Taiwanese Street Corn

This Instant Pot Taiwanese Street Corn features ears of corn pressure-cooked to tender perfection and then coated with a savory sauce made from soy sauce, Shacha sauce, sugar, garlic powder, and sesame oil. The corn is finished in a hot oven to caramelize the sauce, adding a rich glaze and slightly roasted edge. This combination results in corn with a balance of salty, sweet, and umami flavors ideal as a unique side or snack.

Description

Instant Pot Taiwanese Street Corn presents a method of cooking corn on the cob using pressure cooking for speed and tenderness. The corn is cooked whole with a small amount of water, then brushed with a "Yummy Secret Sauce" which blends soy sauce, Shacha sauce, sugar, garlic powder, and sesame oil to create a flavorful glaze. The corn is then roasted in a high-temperature oven to develop a caramelized surface. The pressure cooking helps retain moisture and tenderness while the final roasting intensifies the flavors and adds texture. This preparation highlights the savory, slightly sweet, and garlic-infused sauce unique to Taiwanese street corner snacks.

Because the sauce includes Shacha sauce, a Chinese condiment with spicy, savory, and nutty notes, it gives the corn a distinctive taste profile. The finishing roast adds a bit of crispness to the sauce coating, contrasting with the tender, juicy kernels. This dish can be served as a warm street-style snack or as an accompaniment to other dishes.

The recipe suggests tasting and adjusting the balance of the sauce before application to suit personal preference. Serving the corn immediately after roasting preserves the sauce's fresh flavor and texture.
