This vegan chili is made by sautéing a mix of diced onion, red pepper, celery, and garlic with a blend of chili powder, smoked paprika, cumin, cayenne, and allspice. Canned red kidney beans, fire-roasted diced and crushed tomatoes, tomato paste, and bay leaves are added along with plant-based ground beef substitute. The mixture is pressure cooked in an Instant Pot and finished by stirring in parsley. Description

Instant Pot Vegan Chili blends sautéed aromatics—onion, red pepper, celery, and garlic—with a robust mix of chili spice seasonings including chili powder, smoked paprika, cumin, cayenne, and allspice. These spices develop in fragrance during the initial sauté before beans, fire-roasted diced and crushed tomatoes, tomato paste, bay leaves, and salt are stirred in to create a layered tomato base.

The inclusion of plant-based ground beef substitute adds texture and protein without animal products. The chili is pressure cooked under high heat inside an Instant Pot to meld flavors and tenderize the ingredients in about 10 minutes with a natural steam release. After cooking, additional water and parsley are added and warmed through.

This chili showcases a balanced heat and smoky depth from the smoked paprika and cayenne, with hearty beans and a tomato-forward sauce. It is suitable as a main meal on its own or served over rice or with cornbread to complement the savory and spice notes.

  • 1 Tbsp olive oil
  • 1/2 Cup onion Diced
  • 1 red pepper Diced
  • 1/3 Cup celery thinly sliced
  • 1 Tbsp garlic minced
  • 4 tsp chili powder
  • 2 tsp smoked paprika
  • 1 tsp cumin ground
  • 1/4 tsp cayenne pepper
  • 1/8 tsp ground allspice
  • 1 Can red kidney beans drained and rinsed, dark
  • 1 Can diced tomatoes 14oz, fire roasted
  • 1 Can crushed tomatoes (14oz)
  • 2 Tbsp tomato paste
  • 1 tsp salt sea salt
  • pepper pinch
  • 2 bay leaf
  • 1/2 Cup water
  • 1 Bag plant-based ground beef Gardein brand Beefless Ground
  • 1/4 Cup parsley Minced

Instructions

  1. Pour the oil in your Instant Pot and turn it to sauté mode. Once hot, sauté the onion, pepper, celery and garlic until they begin to soften, about 3 minutes.
  2. Add in the chili powder, paprika, cumin, cayenne and Allspice and cook until fragrant, about 2 minutes.
  3. Add all the remaining ingredients, except the water, Beefless Ground, and parsley, and stir until well combined. Cover the Instant Pot (make sure it's set to sealing) and turn it to manual mode (it should immediately be set for high pressure) set it for 10 minutes. Once cooked, let it steam release naturally.
  4. Once the steam is released, remove the lid and turn it to sauté mode. Add in the water and Beefless Ground and cook for 3-4 minutes, stirring frequently, until the Beefless Ground is warm.
  5. Stir in the parsley and DEVOUR!
