Irish Mint Brownies
Description
The Irish Mint Brownies begin with a fudgy batter made by melting butter and dark chocolate together, then mixing in sugar, flour, and eggs. The batter is baked in an 8-inch square pan until it just starts pulling away from the sides, ensuring a moist, dense texture. Once cooled, the brownies are topped with a creamy frosting made of cream cheese, butter, powdered sugar, peppermint extract, and green food coloring, giving it a minty flavor and pale green hue. A drizzle of melted dark chocolate on top adds a glossy finish and contrasts the creamy topping.
The brownies are chilled after assembly, allowing the frosting to set into a firm, smooth layer. Cut into bars, they offer a balance of rich chocolate and refreshing mint. These have a festive appearance and a cool, creamy texture that complements the dense chocolate base, making them well suited for a dessert or snack with a mint chocolate flavor profile.
