Irish Potato Candy

Irish Potato Candy is a sweet confection made from a creamy mixture of cream cheese and butter combined with powdered sugar and shredded coconut to create a dense dough. After chilling, the dough is shaped into small balls and coated with a cinnamon and brown sugar mixture, giving the candies a golden, rustic coating reminiscent of small potatoes. The texture is smooth and rich inside with a slightly granular, spiced exterior, making them a unique treat.

Description

Irish Potato Candy is a no-bake sweet crafted from softened cream cheese and unsalted butter, creamed together until smooth. Vanilla extract adds aroma, while powdered sugar sweetens and thickens the mixture. Shredded coconut folded in contributes texture and flavor, reminiscent of the fibrous appearance of potatoes, which the candy mimics in shape and coating.

Once combined, the dough is chilled to firm up, then rolled into tablespoon-sized balls. These are coated in a blend of ground cinnamon and light brown sugar, which adds sweetness and a warm spicy note, and also gives the exterior a distinctive color and texture resembling potatoes.

These candies are typically served as bite-sized sweets, offering a cool, creamy interior balanced by the sugary-spiced crust. They require no baking and rely on chilling and careful rolling for final form, making them accessible and convenient confections.
