Ingredients
- 4 cups (800g) lettuce
- 8 ounces (200g) fresh mozzarella
- ¼ pound (100g) salami sliced
- 1 cup (164g) chickpeas
- 1 (120g) medium yellow bell pepper cut in cubes
- 1 cup (283g) diced tomato
- 1 cup (150g) sliced cucumber
- ¼ cup (45g) black olives
Mustard Dressing
- ¼ tablespoon (60ml) olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon white vinegar
- 1 teaspoon dried oregano
- 2 garlic cloves minced
- 1 teaspoon red pepper flakes
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper

Instructions
- Combine lettuce, mozzarella, salami, chickpeas, bell pepper, diced tomato, cucumber and black olives in a large salad bowl or on a serving platter.
- Make the mustard dressing by adding olive oil, mustard, vinegar, oregano, garlic, red pepper flakes, salt and pepper to a small bowl or lidded jar. Stir or shake well to fully combine.
- Pour the dressing on top of the salad, toss lightly to coat, serve, and enjoy!
