Description

Ingredients
- 1 romaine lettuce heart about 3 cups, or 3 heads little gems, finely shredded
- 1 radicchio about 1 1/2 cups, finely shredded
- 15 ounces garbanzo beans canned, drained and rinsed
- 8 Pepperoncini peppers thinly sliced
- 10 Castelvetrano olives pitted, thinly sliced
- 3 radish small, thinly sliced
- 4 ounces provolone cheese diced
- 4 ounces salami thinly sliced rounds, then into strips
- 12 cherry tomato halved
- 2 green onion thinly sliced
- 1/2 recipe red wine vinaigrette
Instructions
- Combine shredded romaine (or little gems) and radicchio into a large salad bowl and toss together.
- Add remaining salad ingredients.
- Drizzle vinaigrette over salad and toss together. Serve.
Notes
- Provolone can be swapped with mozzarella or ricotta salata for different cheese flavors.
