  • 1 radicchio about 1 1/2 cups, finely shredded
  • 15 ounces garbanzo beans canned, drained and rinsed
  • 8 Pepperoncini peppers thinly sliced
  • 10 Castelvetrano olives pitted, thinly sliced
  • 3 radish small, thinly sliced
  • 4 ounces provolone cheese diced
  • 4 ounces salami thinly sliced rounds, then into strips
  • 12 cherry tomato halved
  • 2 green onion thinly sliced
  • 1/2 recipe red wine vinaigrette

Instructions

  1. Combine shredded romaine (or little gems) and radicchio into a large salad bowl and toss together.
  2. Add remaining salad ingredients.
  3. Drizzle vinaigrette over salad and toss together. Serve.
