  • 2 Tbsp mayonnaise
  • 2 Tbsp white wine vinegar
  • 2 Tbsp lemon juice fresh
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/4 cup Parmesan Cheese grated
  • 2 tsp garlic 2 cloves, minced
  • 2 tsp parsley dried
  • 1 tsp basil dried
  • 1/2 tsp oregano dried
  • 1/2 tsp red pepper flakes (optional)
  • salt and freshly ground black pepper

Instructions

  1. In a medium mixing bowl whisk together all ingredients until well emulsified.
  2. Season with salt and pepper to taste.
  3. Preferably refrigerate for at least 30 minutes before using.
  4. Whisk again just before using.
  5. Store in refrigerator in an airtight container for up to 1 week. Dressing solidifies up some because of the olive oil once fully chilled, let rest a room temperature about 15 minutes before using if needed.

Notes

  • Use a blend of extra virgin and regular olive oil for balanced flavor; avoid light olive oil as its flavor is too mild.
  • Refrigerate the dressing for at least 30 minutes before use to develop flavors.
  • Bring the dressing to room temperature for 15 minutes before serving if chilled, as it firms up.
