Description
This homemade Italian Dressing blends a combination of olive oil and mayonnaise with white wine vinegar and freshly squeezed lemon juice for balanced acidity. Dijon mustard and honey provide emulsification and a touch of sweetness, while grated Parmesan cheese contributes savory depth. Minced garlic and dried herbs including parsley, basil, oregano, and optional red pepper flakes lend robust herbal aromatics and gentle spice.
Whisking the ingredients together creates a smooth, creamy dressing that firms when chilled. Allowing it to rest refrigerated for at least 30 minutes improves melding of flavors. The dressing solidifies slightly when cold due to olive oil but will loosen at room temperature before serving.
This versatile dressing works well to dress leafy salads or as a flavorful marinade for vegetables or grilled proteins. Adjust seasoning and herbs to taste. It keeps for up to one week refrigerated in an airtight container.
Ingredients
- 2/3 cup olive oil (see note 1*)
- 2 Tbsp mayonnaise
- 2 Tbsp white wine vinegar
- 2 Tbsp lemon juice fresh
- 1 tsp Dijon mustard
- 1 tsp honey
- 1/4 cup Parmesan Cheese grated
- 2 tsp garlic 2 cloves, minced
- 2 tsp parsley dried
- 1 tsp basil dried
- 1/2 tsp oregano dried
- 1/2 tsp red pepper flakes (optional)
- salt and freshly ground black pepper
Instructions
- In a medium mixing bowl whisk together all ingredients until well emulsified.
- Season with salt and pepper to taste.
- Preferably refrigerate for at least 30 minutes before using.
- Whisk again just before using.
- Store in refrigerator in an airtight container for up to 1 week. Dressing solidifies up some because of the olive oil once fully chilled, let rest a room temperature about 15 minutes before using if needed.
Notes
- Use a blend of extra virgin and regular olive oil for balanced flavor; avoid light olive oil as its flavor is too mild.
- Refrigerate the dressing for at least 30 minutes before use to develop flavors.
- Bring the dressing to room temperature for 15 minutes before serving if chilled, as it firms up.
- Store in an airtight container in the refrigerator and use within one week for freshness.
