Italian Green Beans in Tomato Sauce

This recipe prepares green beans simmered gently in a spiced tomato sauce blending crushed tomatoes, garlic, shallots, olive oil, and red pepper flakes. The green beans are first par-boiled to preserve their texture before finishing in the flavorful sauce. The dish offers a balance of tender, slightly crisp beans with a bright, lightly spicy tomato base. It can serve as a flavorful vegetable side or light vegetarian option with an option to garnish fresh basil.

Description

Italian Green Beans in Tomato Sauce features trimmed green beans cooked in a vibrant tomato sauce seasoned with garlic, shallots, and chili flakes. After a short par-boil to soften but retain firmness, the beans are finished by simmering in the combined tomato and olive oil sauce to absorb flavor. The shallots and garlic add a mild sweetness and depth while the red pepper flakes provide a subtle heat that complements the acidity of the crushed tomatoes. Fresh basil adds a herbal brightness when served.

This method produces green beans that remain tender yet retain some snap, coated evenly in a flavorful, gently spiced tomato sauce. It can be served warm or cold as a side vegetable dish with a variety of main courses. The recipe is adaptable to different types of green beans, and omitting the chili flakes will produce a milder dish.

The use of good quality canned tomatoes enhances the sauce’s richness. Leftovers can be stored refrigerated for several days or frozen, making this a practical dish for batch cooking. Reheating gently is recommended to retain bean texture and flavor. Trimming the beans is optional depending on personal preference.
