Italian Minestrone Soup
Description
Italian Minestrone Soup combines a variety of fresh vegetables — including celery, carrots, onions, green beans — with a tomato base made from diced fire-roasted tomatoes and tomato sauce. The soup incorporates kidney beans for protein and ditalini pasta for substance. The flavor is enhanced with Italian herb seasoning, garlic, and sautéed vegetables. Optional additions include ground Italian sausage for richness, chopped spinach for freshness, and garnishes like fresh basil and Parmesan cheese. Vegetables are first sautéed with garlic and herbs to develop aroma, then simmered with beans, tomatoes, broth, and seasonings to meld flavors. Just before serving, cooked noodles (and optional sausage and spinach) are stirred in to complete the soup, making it filling and balanced. This soup is a versatile meal component especially suited to cooler weather or a vegetable-rich comfort dish.
Ingredients
- 2 cups ditalini noodles dry
- 3 celery chopped, stalks
- 3 carrot chopped, whole
- 1 white onion diced, or yellow onion
- 8 ounces green beans chopped
- 4 tablespoons butter
- 1 tablespoon garlic minced
- 2 teaspoons Italian herb seasoning see notes for DIY, dried
- 1 Kidney Beans drained and rinsed, dark red, 15-ounce can
- 1 Kidney Beans drained and rinsed, light red, 15-ounce can
- 2 diced fire roasted tomatoes 15-ounce cans
- 30 ounces tomato sauce
- 6 cups chicken broth I used low sodium, or vegetable broth
- 2 teaspoon salt or to taste
- ½ teaspoon black pepper
- 1 cup baby spinach leaves optional
- 1 pound Italian sausage optional, ground
- basil optional, fresh basil, cracked, for topping

Instructions
- Cook noodles according to package directions, drain and set aside.
- If including sausage, brown sausage in a large skillet over medium heat. Once fully cooked, transfer to a bowl and cover to keep warm while you prepare the soup.
- In a large stock pot combine celery, carrots, onions, green beans and butter. Saute over medium heat for 3-4 minutes until onions are translucent. Stir in garlic and Italian seasoning for 1 minute til fragrant.
- Stir in beans, diced tomatoes, tomato sauce, chicken broth, salt, and pepper.
- Bring to a boil, reduce heat to medium-low and simmer for 15 minutes.
- Stir in noodles (if using sausage and/or spinach, stir in now with noodles). Taste and add salt and pepper if needed. Garnish with basil and parmesan if desired just before serving.
Notes
- The Italian herb blend combines equal parts oregano, parsley, basil, and thyme.
