Description

Italian Nachos begin with a bright vegetable mixture of seeded tomatoes, diced green bell pepper, white onion, parsley, garlic, and minced peppadew peppers tossed with red wine vinegar and seasonings to create a flavorful topping. Crumbled spicy Italian sausage adds a savory, meaty element.

This combination is layered over tortilla chips spread on a foil-lined baking sheet then topped generously with shredded mozzarella cheese. Broiling briefly melts and bubbles the cheese, while the chips remain crispy under the toppings.

Serving the warm marinara sauce on the side or drizzled atop adds moisture and a familiar Italian tang to balance the spicy and fresh flavors. This snack works well for gatherings or as an appetizer with a fusion twist.

  • 2 plum tomatoes , seeded and coarsely chopped
  • 1/2 green bell pepper , diced
  • 1/4 white onion , diced
  • 1/4 cup Italian parsley , chopped
  • 2 garlic minced, cloves
  • 4 peppadew pepper minced
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon kosher salt coarse
  • 1/4 teaspoon ground white pepper
  • 6 ounces Italian sausage browned and crumbled, spicy, bulk
  • 1-2 cups mozzarella cheese , coarsely shredded or hand torn
  • 8 ounces tortilla chips
  • 1 cup marinara sauce , for dipping or drizzling

Instructions

  1. Combine the tomatoes, bell pepper, onion, parsley, garlic, pepperdews, red wine vinegar, salt and pepper in a medium bowl, toss lightly to coat.  Set aside.
  2. Line a large rimmed baking sheet with aluminum foil, spread the tortilla chips in a single layer as best you can, there will be some overlap.
  3. Evenly sprinkle the sausage over tortilla chips, followed by peppadew mix, leaving behind any excess liquid. Finish with mozzarella cheese.
  4. Place nachos under broiler on high. Watch very closely to prevent them from burning. Remove when cheese melts and gets bubbly.  
  5. Serve the warmed marinara sauce on the side or drizzle over the hot nachos right before serving.
