Ingredients

  • 1 romaine lettuce chopped, head
  • 1 cup radicchio chopped
  • 1/2 red onion thinly-sliced, medium
  • 1 1/4 cups cherry tomato halved
  • 3/4 cup black olives pitted
  • 1/2 cup Pepperoncini sliced
  • 5 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon oregano dried
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup Parmesan Cheese shaved

Instructions

  1. In a large salad bowl, combine chopped romaine lettuce, radicchio, sliced red onion, halved cherry tomatoes, pitted black olives, and sliced pepperoncini.
  2. In a small bowl, whisk together extra-virgin olive oil, red wine vinegar, dried oregano, Italian seasoning, kosher salt, and black pepper. Adjust seasonings as needed.
  3. Pour the dressing over the salad and toss well to coat evenly. Sprinkle with Parmesan cheese before serving.
