Italian Sautéed Shrimp
Description
This recipe sautés large raw shrimp in olive oil with chopped garlic until the shrimp are just cooked through and pink with opaque flesh. Fresh Italian parsley adds herbal brightness, and red pepper flakes are optional for a touch of heat. The shrimp cook quickly in a skillet over medium heat, typically 5 to 6 minutes, with frequent stirring to ensure even cooking without toughness.
The simplicity of the ingredients allows the natural sweetness of the shrimp to shine. Some prefer unpeeled, deveined shrimp as commonly served in Italy, but peeled shrimp also work well. A splash of lemon juice can be added or served on the side for brightness.
Leftover shrimp can be stored refrigerated for up to three days and reheated gently in the oven or on the stovetop to maintain tenderness. The recipe suits a quick appetizer or main dish component enhanced by fresh herbs and garlic oil.
Ingredients
- 2-3 tablespoons olive oil
- 1 clove garlic chopped
- 1 pound Shrimp with or without shell and deveined, large or jumbo, raw
- 1/3 cup Italian parsley chopped, fresh
- 2-3 pinches salt if needed
- 1-2 dashes hot pepper flakes optional
Instructions
- In a large skillet on medium heat add the olive oil and garlic cook for approximately 30 seconds, then add the shrimp, sprinkle with salt and chopped parsley. If you wish you can also add a dash or two of red pepper flakes to the pan.
- Cook for approximately 5-6 minutes or until the shrimp is pink and opaque. Stirring often. Over cooking the shrimp will make it rubbery. Serve immediately. Enjoy!
- Some like to add a splash of lemon juice also, you could serve it with sliced lemon on the side.
Notes
- Using unpeeled deveined shrimp reflects the typical Italian preparation; peeled shrimp can also be used.
- If using frozen shrimp, rinse under cold water to thaw before cooking.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat shrimp gently in a 300°F oven for 12-15 minutes or in a pan with olive oil over medium heat, stirring frequently.
