Italian Sheet Pan Sausage, Potatoes, and Tomatoes

This Italian Sheet Pan meal combines Italian sausage, quartered Yukon gold potatoes, canned peeled tomatoes, garlic, and herbs in one baking dish. The result is a savory dish where potatoes roast to tender, golden edges while sausages cook through, absorbing the herb-infused olive oil and tomato juices. It’s an all-in-one approach convenient for a flavorful dinner with minimal cleanup.

Description

The Italian Sheet Pan Sausage, Potatoes, and Tomatoes recipe features Italian sausage paired with peeled and quartered Yukon gold potatoes and canned whole peeled tomatoes drained and cut. Garlic cloves and dried herbs including thyme, oregano, and rosemary complement the dish, all tossed in extra virgin olive oil for roasting. The ingredients are arranged on a foil-lined sheet pan to prevent sticking and to ease cleanup. Roasting in a hot oven at 425°F encourages browning and crisping, especially on the potatoes and sausages.

The sausages cook atop the potatoes, allowing fat and juices to drip down and flavor the potatoes, while the tomatoes add acidity and moisture to the roasting pan. The herbs impart aromatic notes throughout. Garlic quarters soften and mellow as they roast alongside. The dish should be stirred occasionally during its 30-35 minute roasting time to promote even cooking and browning.

Serving the dish hot after roasting provides a hearty main meal suitable for casual family dinners. The combination of potatoes and sausage offers a filling, balanced plate without needing additional sides. The foil lining is recommended for easy pan cleanup, and spacing ingredients to avoid overcrowding ensures proper roasting rather than steaming.

Cooking times vary depending on sausage size; smaller links require checking sooner around 18-20 minutes, while larger links take closer to 25 minutes. Avoiding overcrowding the pan improves roasting results.

Ingredients

Servings
  • 1 pound Italian sausage or sausage of choice
  • 1 pound potato peeled and quartered, Yukon gold variety
  • ¼ cup extra virgin olive oil
  • 1 .5-ounce can whole peeled tomatoes cut into pieces and liquid drained
  • 2 cloves garlic peeled and cut in quarters
  • ¼ teaspoon thyme dried
  • ¼ teaspoon oregano dried
  • ¼ teaspoon rosemary dried
  • salt to taste
  • black pepper to taste

Instructions

  1.  Line a 9x13 inch baking pan with foil. Preheat oven to 425 degrees F.
  2.  Add the prepared potatoes and garlic to the baking sheet, add olive oil and toss to coat all sides. Arrange the sausage links on top of the potatoes in a single layer. Add the tomatoes to the pan and gently toss to combine. Sprinkle with herbs, salt, and pepper.
  3. Bake for 30-35, or until potatoes pierce through with a fork. You can open the oven and stir from time to time to ensure the dish cooks evenly. Serve hot. Mangia! (Eat)

Notes

  • Line the baking pan with aluminum foil to prevent sticking and simplify cleanup; avoid parchment as it steams rather than crisps ingredients.
  • Adjust cooking time depending on sausage link size; smaller links cook faster.
  • Leave enough space on the pan to allow roasting instead of steaming for even browning.
