Italian Style Meatball Kabobs

Italian Style Meatball Kabobs combine savory pre-made Italian meatballs with vibrant chunks of red, green, and yellow bell peppers, plus red onion, threaded onto skewers and oven-roasted. The roasting cooks ingredients through while preserving some texture and color contrast. Brushing with basil pesto at the end adds an optional herbaceous layer. These kabobs offer a mix of juicy meat and tender, slightly crisp vegetables in one convenient skewer, making them a straightforward dish for casual dinners or entertaining.

Description

Italian Style Meatball Kabobs are made by threading Italian-style fresh meatballs and colorful bell peppers along with red onion onto skewers. Cooking takes place in a 400°F oven on a rack to ensure even roasting and allow excess fat to drip away. The meatballs are cooked fully to a safe internal temperature of 185°F and develop a browned exterior while the peppers soften but retain some bite and sweetness. Adding basil pesto just before serving can introduce herbal brightness and additional moisture.

The combination of meat and vegetables on a skewer creates an easy-to-serve, handheld meal that can be enjoyed by itself or alongside simple sides like salads or bread. The distinct colors from the bell peppers also add visual appeal to the finished kabobs.

Using pre-made fresh Italian meatballs simplifies preparation. Monitoring the internal temperature ensures the meat is safely cooked yet juicy. For best results, brush pesto only after baking so it stays fresh and maintains its flavor.
