Italian Sub/hoagie/hero
Description
This sandwich combines several types of Italian-style deli meats—Capicola, Genoa salami, ham, and pepperoni—with provolone cheese on a sizable sub roll. Sliced tomato, onion, shredded lettuce, and hot cherry peppers add freshness, crunch, and heat.
The iceberg lettuce is seasoned with oregano, salt, pepper, and lightly dressed with a mixture of red wine vinegar and olive oil before being layered on the sandwich. The same oil and vinegar mixture is also added to the assembled sandwich to moisten and flavor the bread and meats. The result is a balanced sandwich with savory meats, creamy cheese, spicy peppers, and tangy, herbed dressing on a chewy roll.
The sandwich is best eaten shortly after assembly to prevent sogginess. The provided amounts create one large sub approximately 12 inches long, with guidance for scaling ingredient quantities and serving sizes.
Using a shaker bottle to mix and distribute the dressing allows guests to customize their sandwich to taste.
Ingredients
- 1 large sub roll
- 1/10 pounds Capicola thin sliced
- 1/10 pounds genoa salami thin sliced
- 1/10 pound ham thin sliced, boiled
- 1/10 pounds pepperoni thin sliced
- 1/5 pound provolone cheese
- 1 medium tomato sliced
- 1 medium onion sliced
- 4 medium hot cherry pepper destemmed, seeded, and sliced
- 1 1/4 cup iceberg lettuce shredded
- 4 ounces red wine vinegar
- 3 ounces olive oil
- 3/4 teaspoon oregano dried
Instructions
- Mix the oil and vinegar in a shaker bottle. Shred the lettuce and season with the oregano and salt and pepper to taste. Drizzle a bit of the oil and vinegar (save most of it for the sandwich) onto the lettuce and set aside.
- Layer the meat, then the cheese onto 1 large hero (sub, hoagie) roll.
- Top with the seasoned lettuce, cherry peppers. Add as much sliced tomato and onion as you like.
- Soak the bread and meats with the oil and vinegar mix.
- Eat quickly so the sandwich doesn't become too soggy. Enjoy!
Notes
- The ingredient quantities are for one large 12" sub; increase amounts proportionally for more sandwiches.
- New York-style heroes tend to use 1/3 to 1/2 pound meat and a thin cheese layer, while round deli sandwiches use less meat but also a thin cheese layer.
- Mixing oil and vinegar dressing in a squeeze bottle helps portion and customize moisture for each sandwich.
