Description
Italian Wedding Cookies combine softened unsalted butter, sugar, and almond extract, creamed together for a light base. Eggs are incorporated to enrich the dough before gradually adding flour and baking powder for structure. Milk is mixed in to achieve a balanced dough consistency. The cookies are portioned with a mini scooper and baked until they hold a gentle golden edge. After cooling, they are topped with a smooth almond icing made from powdered sugar, milk, and almond extract. This icing sets to a delicate shine and is decorated with colorful sprinkles for a festive appearance. The finished cookies offer a soft texture complemented by the sweet, nutty glaze. They lend themselves well to celebrations and teatime treats.
Ingredients
- ½ C butter unsalted, softened
- 1/2 C sugar
- 3 egg large
- 2 tsp almond extract
- 2 1/2 C flour
- 1 tbsp baking powder
- 3 milk 4 tbsp
Icing:
- 2 C powdered sugar
- 3 tbsp milk
- 1 tsp almond extract
- 1 Sprinkles container
Instructions
- Preheat oven to 350 and line two cookie sheets with parchment paper
- Using a large bowl, beat the butter and sugar, almond extract until light and fluffy
- Beat in the eggs
- Using a medium bowl, whisk the flour and baking powder
- Gradually beat in the dry ingredients
- Beat in the milk until combined
- Using a mini ice cream scooper, scoop out some dough and place it onto the cookie sheet
- Bake cookies 9 -11 minutes
Almond Icing
- Using a large bowl, whisk together all ingredients except the sprinkles
- Spoon about 1 tbsp of icing onto the top of the cookies and let drip down
- Sprinkle some easter sprinkles on top
- Allow the icing to harden before enjoying!
