Ingredients

  • 8 Orange Bell Peppers
  • 2 tablespoons olive oil
  • 2 ¼ cups diced yellow onion about 1 large onion
  • 1 pound lean ground turkey
  • 3 cloves garlic minced
  • 1 ½ cups white Basmati rice cooked according to package instructions
  • 15.5 ounce can black beans drained and rinsed
  • 15 ounce can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¾ cup shredded cheddar or colby jack cheese

Instructions

  1. Preheat oven to 400 F.
  2. Cut the tops off the bell peppers.
  3. Using a small paring knife, remove the ribs and seeds from inside. Then, cut jack-o-lantern faces on one side of each pepper.
  4. Place peppers in a lightly greased 9x13-inch baking dish.
  5. Heat a large skillet over medium heat.
  6. Add oil and swirl to coat.
  7. Add onions. Cook 5 minutes, stirring occasionally.
  8. Stir in garlic an cook for about 30 seconds, stirring the entire time.
  9. Add ground turkey. Cook another 5 minutes, breaking apart the meat with a wooden spoon or rubber spatula.
  10. Stir in rice, black beans, tomato sauce, oregano, basil, salt, and pepper. Cook 3-5 more minutes, or until the rice starts to absorb the sauce. Remove from heat.
  11. Scoop a heaping amount of the rice filling into each pepper.
  12. Top the filling with some shredded cheese.
  13. Pour 1 ½ cups of water around the peppers in the bottom of the baking dish.
  14. Bake, uncovered, for 10-15 minutes, or until the cheese melts and the peppers begin to soften.

Notes

  • Turkey: Ground beef or ground chicken could be used in place of the ground turkey.
  • Rice: Long-grain white rice or jasmine rice could be used in place of basmati rice.
  • Veggies: Feel free to add other vegetables, like sauteed mushrooms or zucchini, to the rice filling.
  • Beans: You can use another type of bean in place of the black beans.
  • Seasoning: Italian seasoning could be substituted for the oregano and basil.
  • Cheese: Or use another type of shredded cheese, like pepper Jack.
