Ingredients

  • 4 orange peppers
  • 1 lb. lean ground beef
  • 1 cup cooked rice
  • ½ onion chopped
  • 1 tsp. Italian seasoning
  • 1 tsp. minced garlic 
  • salt and pepper to taste
  • ½ cup shredded Mozzarella cheese

Instructions

  1. Preheat the oven to 350 degrees.
  2. Remove the tops from the bell peppers and the seeds.
  3. Using a small sharp knife, cut the face of a Jack-O-Lantern into the side of each bell pepper.
  4. In a large bowl, combine all of the ingredients except the mozzarella cheese. Mix well.
  5. Add the meat mixture inside of each pepper.
  6. Sprinkle mozzarella cheese to the top of each pepper.
  7. Place the peppers upright in a large baking dish.
  8. Bake in the preheated oven for about 15-20 minutes, or until the meat is cooked through.
