Jackfruit Lettuce Cups

Jackfruit Lettuce Cups feature shredded jackfruit coated in a peanut butter-soy-agave sauce, served in crisp butter lettuce leaves. The mixture has a balance of savory, sweet, and mildly spicy flavors with crunchy bell pepper and green onion garnishes. This dish offers a fresh, handheld way to enjoy jackfruit with a flavored sauce.

Description

The filling combines creamy peanut butter, soy sauce, agave syrup, rice vinegar, water, and garlic chili sauce whisked into a smooth sauce. Shredded canned jackfruit is mixed in and cooked briefly to meld flavors. The filling’s texture is tender with a slight chew from jackfruit, accented by diced red bell peppers and sliced green onions for crispness and color.

The lettuce cups serve as natural vessels for the filling, providing a fresh, crisp contrast. These are ideal for casual meals or as an appetizer and can be customized by omitting chili sauce for a milder taste. The dish highlights jackfruit’s adaptability as a meat alternative with a flavorful sauce.

Notes suggest the option to marinate the jackfruit longer for extra flavor and mention flexibility in serving, either pre-filled in lettuce or as a self-assembly setup.

Notes

  • For a milder, kid-friendly version, omit the chili sauce from the sauce mixture.
  • Marinate the jackfruit in the sauce for several hours or overnight to intensify the flavor before cooking.
  • You can serve the filling already placed in the lettuce cups or present it separately to let guests assemble their own lettuce cups with toppings.
