Ingredients
- 4 large jalapeno peppers, stems removed, sliced in half, seeded
- 2 tablespoons extra virgin olive oil
- 1 package (8 ounces) cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- 16 lices deli ham, divided
- 8 lices swiss cheese, divided
- 8 lices sourdough bread
- ¼ cup (½ stick / 57 g) unsalted butter, room temperature, divided
- 1 cup (113 g) mild cheddar, finely shredded, divided
Instructions
- Preheat oven to 425°F*. Line a baking sheet with parchment paper.
- Brush the jalapeños with the oil on all sides and place on the prepared baking sheet.
- Roast the peppers in the oven for about 15 minutes, or until the skin of the jalapeños begins to char slightly.
- Remove from oven and set aside to cool slightly.
- To a medium mixing bowl, add cream cheese, garlic powder, onion powder, and pepper. Mix well.
- Once the jalapenos are cool enough to handle, roughly chop them and fold them into to the cream cheese mixture.
Assembly
- Top one slice of bread with ¼ of the cream cheese mixture, 4 slices of ham, and 2 slices of Swiss cheese. Top with a second slice of bread.
- Heat a medium skillet over medium heat. Once hot, add ½ tablespoon butter and 2 tablespoons (or enough for a thin layer of cheese to cover the entire piece of bread) shredded cheese. Place the assembled sandwich in the skillet, on top of the butter and cheese.
- Cook for 3-4 minutes. Then, using a spatula, lift the sandwich. Before placing it back into the pan, add another ½ tablespoon butter and 2 tablespoons shredded cheese to the skillet.
- Cook the other side in the butter and cheese for an additional 3-4 minutes, or until the cheese inside is melted and the outside is golden brown.
- Using a spatula, remove the sandwich from the skillet. Repeat with the remaining sandwiches. Serve immediately.
