Ingredients

  • 2 pounds chicken breast chopped into cubes, boneless skinless
  • 1/2 teaspoon garlic powder
  • salt to taste
  • black pepper to taste
  • 1 1/2 tablespoons olive oil
  • 8 ounces cream cheese softened
  • 10 ounces jalapeno pepper seeded and sliced
  • 3/4 cup cheddar cheese grated, sharp
  • 1/3 cup Bacon crumbled, cooked

Instructions

  1. Preheat the oven to 375˚F.
  2. Toss the chicken with garlic powder, salt, and pepper. Add oil to a large skillet over medium heat and add chicken once the oil is hot. Brown the chicken pieces for about 5 minutes, stirring occasionally.
  3. Place chicken breast pieces in a large casserole dish. Spread the softened cream cheese evenly over the chicken.
  4. Layer sliced jalapeño peppers over the cream cheese. Sprinkle the grated cheddar cheese on top.
  5. Bake in the preheated oven for 30 minutes. Remove from oven, sprinkle with crumbled bacon, and return to oven for an additional 5 minutes or until the chicken reaches an internal temperature of 165˚F.
