Jam Tarts (Old Fashioned)
Description
Jam Tarts (Old Fashioned) feature a shortcrust pastry made by incorporating cold butter into flour and sugar, resulting in a tender and flaky crust once baked. The dough is chilled before rolling out, which helps maintain its structure and makes it easier to handle. Individual tart shells are formed using a mini cupcake pan, then filled with a generous spoonful of jam. Baking at 350°F ensures the crust becomes golden and crisp without burning. The filled tarts cool to a texture where the buttery shell supports the sweet, slightly sticky jam filling.
The combination of simple ingredients such as all-purpose flour, butter, and egg yolks creates a classic tart base. Grating the butter cold helps distribute it evenly, producing a delicate flakiness. The ice water keeps the dough chilled while mixing, preventing the butter from melting prematurely. The jam adds a fruity brightness, and its quantity is enough to complement but not overwhelm the pastry.
This recipe works well for making small, individual-sized tartlets that are easy to serve as snacks or desserts. The straightforward method allows for variations by changing the jam flavor as desired. Cooling before serving lets the crust crisp fully and the jam set slightly, making them easier to handle and eat.
Ingredients
- 2 cups all-purpose flour
- 4 tbsp sugar
- 12 tbsp butter extra cold, unsalted
- 2 egg yolk
- 6 tbsp water ice
- 1 1/2 cups jam
Instructions
- Combine the all-purpose flour and sugar. Grate the cold butter into the flour mixture.
- Stir the egg yolks and water into the flour mixture.
- Work the dough by hand until it is well-combined. Cover and chill the dough in the fridge for about 30 minutes.
- Remove the dough from the fridge and roll it out into a thin, flat layer. Using a cookie cutter, stamp out the dough.
- Place each dough piece inside the molds of a mini cupcake pan.
- Spoon a bit of jam into the tart shells.
- Bake the shells at 350°F for about 15 minutes or until they are golden brown. Allow them to cool, then enjoy!
