Ingredients

For the Dough

  • 4 cups all-purpose flour , sifted
  • 1 cup butter cut into small cubes, cold; or margarine
  • 1/2 cup water cold
  • 2 teaspoons Turmeric
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar

For the Filling

  • 1 pound ground beef
  • 1 carrot small
  • 1 onion
  • 3 cloves garlic
  • 2 green onions

Seasoning for the Filling

  • 3 tablespoons vegetable oil neutral
  • 1/2 teaspoon curry powder
  • 1 teaspoon Turmeric
  • 1/2 teaspoon thyme
  • 1/4 teaspoon nutmeg freshly grated
  • 1/4 teaspoon ground ginger
  • chili powder a pinch
  • 1 teaspoon paprika
  • 2 tablespoons browning sauce
  • allspice a pinch
  • 1 teaspoon salt
  • black pepper freshly ground
  • 2/3 cup water
  • 1/4 cup breadcrumbs

For the Egg Wash

  • 1 egg

Instructions

Dough

  1. Pour the flour into a large mixing bowl. Add the salt, curry powder, and turmeric.
  2. Mix well, then add the butter or margarine cubes.
  3. Using your fingertips, rub the fat into the flour until the mixture resembles coarse crumbs.
  4. Add the cold water and form a dough ball. Be careful not to overwork the dough.
  5. Wrap the dough in plastic wrap and refrigerate for 1 hour.

Filling

  1. Finely chop the onion, garlic, green onions, and carrot together.
  2. In a skillet, heat the oil over medium heat. Add the chopped mixture and sauté for 5 minutes.
  3. Add the ground beef and all the spices. Mix well and cook for 5 minutes, stirring regularly.
  4. Add the browning sauce and breadcrumbs, and mix well.
  5. Add the water and let it simmer for 10 minutes over medium heat.

Shaping and Baking

  1. Preheat the oven to 350°F (convection) or 400°F (conventional).
  2. Take the dough out of the refrigerator and roll it out to about 1/8 inch thick.
  3. Using a bowl or a 6-inch cutter, cut out circles from the dough.
  4. Place about 2 tablespoons of filling in the center of each circle (do not overfill so the dough can easily be folded over).
  5. Dip your finger in cold water and lightly dampen the edge of the dough circle.
  6. Fold the circle in half to form a semi-circular patty and press the edges together with a fork to seal.
  7. Brush each patty with the beaten egg using a pastry brush.
  8. Place the patties, spaced apart, on a baking sheet lined with parchment paper.
  9. Use a toothpick to gently poke each patty 2 or 3 times.
  10. Bake for 20 to 25 minutes or until golden brown. Enjoy!
