Japanese Garlic Rice

Japanese Garlic Rice is a teppanyaki or hibachi restaurant classic. In this recipe, I'm going to show you how to make this flavorful fried rice at home, finished with savory garlic butter and crispy garlic chips.

  • 345 grams rice cooked
  • 9 grams garlic (1 large clove)
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter cultured, unsalted
  • black pepper (to taste)
  • ¼ teaspoon salt umami salt
  • 1 teaspoon soy sauce
  • flat leaf parsley (chopped for garnish)

Instructions

  1. Wet your hands and crumble up 345 grams cooked rice, so there are no big clumps.
  2. Use a mandoline or sharp knife to slice ⅔ of 9 grams garlic into thin, even slices.
  3. To make the garlic butter, grate the remaining garlic and mix it together with 1 tablespoon cultured unsalted butter.
  4. Add 1 tablespoon vegetable oil to a non-stick frying pan over medium-low heat, add the sliced garlic in a single layer, and make sure it's submerged in oil.
  5. Flip the garlic over repeatedly until it starts to brown around the edges and it's not sizzling much anymore. Work quickly to remove the garlic chips from the pan, leaving the oil behind.
  6. Increase the heat to high and add the rice to the garlic oil. Stir-fry until the rice is heated through and fragrant.
  7. Season with ¼ teaspoon umami salt and black pepper and then drizzle 1 teaspoon soy sauce down the edges of the pan. Quickly toss and stir it into the rice.
  8. Finish the rice by melting the garlic butter into the rice. Serve the garlic fried rice garnished with garlic chips and chopped flat leaf parsley.
