Japanese Rice Porridge with Sweet potato いも茶がゆ

Japanese rice porridge, or 'okayu', is a warm and delicious comfort food. It's so soft and easy to digest so it's a perfect dish for when you're sick!

Ingredients

Servings
  • 2 cups of uncooked rice
  • 10 cups of water
  • 1 Japanese tea bag of any kind
  • 1 purple sweet potato

Instructions

  1. Cut the sweet potato into bite size pieces and leave them in a bowl of water.
  2. Wash and rinse the uncooked rice until the washing water becomes clear then drain with a strainer.
  3. Place the drained rice and 10 cups of water in a large pan.
  4. Bring it to boil over high heat then add a tea bag.
  5. Turn the heat down to medium to simmer to cook the rice for about 10 minutes.
  6. Drain the water from the sweet potatoes and add into the pan.
  7. Simmer for a further 10 min to cook the sweet potato bits.
  8. Serve in a rice bowl.

Notes

  • Any kind of Japanese tea such as Hojicha, Genmai cha,  and Mugi cha(Barley tea).
