Description

These Jello Cookies start with a creamed mixture of softened butter and sugar combined with egg and vanilla. Dry ingredients including flour, baking powder, baking soda, and cream of tartar are whisked separately and gradually mixed in to form a dough.

The dough is divided into four equal parts, each kneaded with approximately two tablespoons of flavored gelatin powder. Adding food coloring enhances vibrancy but is optional. The dough is formed into one-inch balls, rolled in extra jello powder or sugar, then flattened before baking.

Baked at 350°F (about 175°C) for 8–10 minutes, the cookies hold a soft, tender crumb with a hint of the jello’s fruity flavors. Cooling on a rack preserves their structure.

  • 1 1/2 cups butter softened, unsalted
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 4) 3 oz. jello packages, used 4 different flavors possible

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In a large bowl, cream together butter and sugar with a mixer -add in egg and vanilla.
  3. In a separate bowl whisk together flour, baking powder, baking soda and cream of tarter.
  4. Gradually add flour mixture to the wet ingredients in the mixer.
  5. Divide the dough into four sections.
  6. Sprinkle two Tablespoons of jello onto each section and then knead the dough until combined. You can add a few drops of food coloring in, if you’d like the color to be more vibrant.
  7. Roll dough into 1-inch balls. Roll the balls into the extra jello powder or in the sugar.
  8. Then place dough onto the baking sheet two inches apart.
  9. Flatten the dough with the bottom of a glass.
  10. Bake cookies for 8-10 minutes.
  11. Remove cookies from the pan and allow to cool on a wire rack.
