Jello Shots Recipe with Baileys Irish Cream

This recipe creates layered jello shots combining coffee-flavored gelatin and Baileys Irish Cream gelatin. The first layer is gelatin set with hot coffee and sugar, cooled to firm, then poked with holes to help the layers bond. The second layer consists of Baileys mixed with gelatin and gently heated, poured over the coffee layer and refrigerated until set. The final product is cut into squares or shapes and served chilled, with a creamy and coffee-infused alcoholic flavor.

Description

The Jello Shots Recipe with Baileys Irish Cream involves preparing two gelatin layers for a layered effect. The first is a coffee-flavored gelatin set by whisking granulated sugar and unflavored gelatin into hot coffee, then refrigerated until firm. Poking holes with a skewer helps the subsequent Baileys gelatin layer adhere properly. The Baileys mixture is gently heated with gelatin to prevent curdling and then poured over the coffee gelatin. Chilling until fully set results in firm jello shots with coffee and creamy Irish cream flavors.

The gelatin is cut into bite-sized squares or shaped rounds for serving. The dessert carries noticeable alcohol content due to Baileys and should be served responsibly to adults 21 and older. Whipped cream can be added as a topping for texture contrast if desired.

This recipe suits parties or celebrations seeking a creamy, coffee-based alcoholic treat presented with visual layers and smooth texture.

Ingredients

Servings
  • 750 ml Bailey's Irish Cream Liqueur (1 bottle)
  • 2 cups coffee or espresso, hot
  • 5 packets gelatin divided, unflavored
  • 3 tablespoons granulated sugar
  • Whipped Cream

Instructions

  1. Line a 9X9 inch baking dish with plastic wrap. Pour the hot coffee into a medium bowl. Whisk in the sugar. Then briskly whisk in 2 packets of unflavored gelatin. Whisk fast to ensure there are no clumps. Pour the coffee gelatin into the prepared pan. Refrigerate for at least 1 hour, or until firm. Then use a wooden skewer to poke holes in the surface of the gelatin. (This will help the two gelatin layers stick together.)
  2. Heat 1 cup of Baileys Irish Cream on the stovetop or in a microwave safe bowl. Heat until it almost simmers, then briskly whisk in 3 packets of unflavored gelatin, making sure there are no clumps. Then whisk the remaining bottle of Baileys into the mixture. Pour the Baileys gelatin over the coffee gelatin. Refrigerate for at least 2 hours, until completely firm.
  3. Gently lift the entire sheet of gelatin out of the pan by the edges of the plastic wrap. Cut the gelatin into 36 squares. You could also use a small 1 - 1 1/2 inch cooker cutter to make round jello shots.
  4. Pipe small dollops of whipped cream on top of each jello shot. Refrigerate until ready to serve.

Notes

  • Although Baileys Irish Cream is heated briefly, these shots contain significant alcohol; serve only to guests aged 21 or older.
  • Use plastic wrap to line the pan for easy removal of gelatin layers before cutting.
  • Poking holes in the first gelatin layer helps the Baileys layer adhere without separating.
  • Gently heat Baileys with gelatin to avoid clumps and preserve smooth texture.
  • Cut into small squares or use cutters for round shapes, approximately 36 pieces from the recipe.
