  • 1/4 cup lime juice
  • 1/4 cup soy sauce
  • 4 green onions cut into 1 inch pieces
  • 1 tablespoon thyme fresh leaves
  • 1 tablespoon garlic coarsely chopped
  • 2 teaspoons ginger coarsely chopped
  • 1 tablespoon brown sugar
  • 1 scotch bonnet pepper stem removed, you can remove seeds and ribs for less heat
  • 1 teaspoon black pepper ground
  • 1/2 teaspoon kosher salt
  • 1 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon

Instructions

  1. Place all the ingredients in a food processor or blender.
  2. Pulse or blend until a mostly smooth mixture forms.
  3. Pour the marinade over 3 pounds of bone in chicken pieces.
  4. Let the chicken sit in the marinade for at least one hour, or up to 12 hours.
  5. Grill or bake as desired, then serve.
