Ingredients

  • 1 lb (453g) pork tenderloin cut into ½ inch slices
  • 6 tablespoons Jerk Seasoning marinade
  • 3 tablespoons olive oil divided
  • 3 cups (525g) frozen sliced onions or 3 medium onions, sliced into strips
  • 2 cups (350g) frozen bell pepper strips or 2 bell peppers, seeded and cut into strips
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon soy sauce
  • 12 slider buns or dinner rolls

Instructions

  1. Marinate the pork tenderloin pieces in the jerk seasoning
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  3. Add the sliced onions and peppers and cook for 2 mins, then reduce the heat to medium-low and cook for 15 mins, stirring frequently.
  4. Turn the heat down to low and add the soy sauce, salt, pepper and thyme and cook for 2 more minutes. 
  5. Transfer peppers and onions to a bowl and set aside.
  6. Turn the heat back up to medium and add more olive oil in the skillet.
  7. Remove pork from marinade, add to the skillet and cook for about 12 minutes, stirring frequently.
  8. Slice dinner rolls in half and place 1-2 pieces of pork on each bottom piece. Top the pork with the onions and peppers and then serve.

Notes

  • There are 9 Blue Plan SmartPoints in one serving.
  • I recommend using Hawaiian rolls, if available.
  • Pork Tenderloin Sliders are even more amazing if you toast the bun. You can butter them and broil them in the oven for a few minutes to crisp them up for a little extra crunch.
  • Not a huge fan of pork, or don't have any on hand? You can make these into shredded chicken sliders!
  • Feel free to top with coleslaw or pineapple salsa a slice (or two) of cheese.
  • Most people eat around 2 sliders each. This recipe makes about 12 Jerk Pork Tenderloin Sliders, so it will serve about 6 people. Serving Suggestions
