Jeyuk Bokkeum (or Spicy Pork Bulgogi) centers on thinly sliced pork shoulder or butt marinated in a Korean paste called gochujang and chili flakes (gochugaru), combined with soy sauce, rice wine, sugar, honey, sesame oil, garlic, ginger, and grated apple or plum syrup. The marinade tenderizes the pork and imparts a layered spice and sweet flavor. Onion and scallions are added to the mix to offer textural contrast and mild aromatic notes.

The pork is marinated at least 30 minutes, then cooked in batches over medium-high heat, allowing the marinade to caramelize slightly, enhancing the dish's complexity. This method keeps the pork tender while developing a lightly charred edge.

This dish works well served with rice and banchan (side dishes) for a traditional Korean meal. The sweet-spicy flavor combination pairs well with leafy greens or pickled vegetables for balance.

  • 2 pounds pork shoulder thinly sliced, or butt, or combined with pork belly
  • 1/2 onion medium, sliced
  • 3 scallions cut into 2-inch pieces

Marinade:

  • 6 tablespoons gochujang
  • 1 or 2 tablespoons gochugaru
  • 3 tablespoons soy sauce
  • 3 tablespoons rice wine for cooking, also known as Mirim or Mirin
  • 2 tablespoons sugar or brown sugar
  • 1 tablespoon honey or more sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons garlic minced
  • 1 tablespoon ginger grated
  • 1/2 apple small, grated, 3-4 tablespoons, or 2 tablespoons plum syrup (maesilcheong

Instructions

  1. Thinly slice the meat, if not pre-sliced.
  2. Mix all marinade ingredients well in a large bowl. Add the meat and toss everything well to evenly coat the meat with the marinade. Add the onion and scallions and toss again. Let it sit for about 30 minutes.
  3. Grill or pan fry in a skillet (in 2 batches) over medium high heat until slightly caramelized. Adjust the heat as necessary.
