Jjapaguri with Steak
Description
This recipe combines equal parts of Chapagetti and Neoguri noodles, two distinct Korean ramen varieties, to create a mixed noodle dish called Jjapaguri or "ram-don." It incorporates cubed sirloin steak seasoned with salt, pepper, and optional garlic powder, which is quickly seared in oil and basted with butter to develop flavor and tenderness.
The noodles are cooked separately in boiling water along with vegetable flakes for about three minutes, then drained with some starchy water reserved. Seasoning packets from the noodle packages are added, with an option to use less Neoguri seasoning for milder heat. The noodles are tossed with reserved water to achieve a creamy consistency.
The cooked steak cubes are then combined with the seasoned noodles, mixing evenly. Garnishing with sliced scallions adds a fresh note. The final dish offers a balanced mix of savory, spicy, and rich flavors with tender beef bites and chewy noodles.
This dish can serve as a standalone meal or as a comforting, flavorful dinner option that showcases instant noodles elevated with fresh steak and a butter finish.
Ingredients
- ¾ - 1 lb sirloin steak cubed
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder optional
- 1 tbsp neutral cooking oil generic cooking oil
- 1 tbsp butter unsalted
- 1 pack chapagetti
- 1 pack neoguri
Instructions
- Season the cubed steak with salt, pepper, and garlic powder.
- In a cast-iron or large skillet, heat up the oil and add the steak to the hot pan. Sear the beef for 1 to 2 minutes per side before adding butter (if using) and baste the steak until it is done to your liking. Set the steak aside to rest as you continue to make the ram-don.
- Meanwhile, bring a pot of water (around 4 cups) to a boil and add the noodles and vegetable flakes. Cook for 3 minutes, reserve a cup of the starchy water and strain the rest of the water out.
- Add the seasoning packets to the noodles (add less of the Neoguri if you want it less spicy).
- Toss the noodles with a few splashes of the reserved water, until you reach a desired thick consistency. I usually add two tablespoons at a time.
- Add the steak to the noodles and toss to combine. Top with some scallions for garnish if desired.
Notes
- This version is adapted from Nongshim’s products and inspired by the movie Parasite.
- Adjust the amount of Neoguri seasoning if you prefer less spiciness in the noodles.
- Use a cast iron skillet or heavy pan to achieve a good sear on the steak.
