Jjapaguri with Steak from Movie Parasite
Description
This Korean noodle dish mixes the distinctive flavors of Chapagetti and Neoguri instant noodles. Beef is cut into bite-sized pieces, seasoned with salt and pepper, and seared in oil until browned. The optional garlic adds aromatic depth. Meanwhile, noodles cook briefly in boiling water, then are drained and added to the pan with the beef.
The sauce packets from both noodle varieties are incorporated, with a portion of the Neoguri seasoning adjusted to taste. Adding reserved cooking water helps evenly distribute the sauce and creates a slightly thickened coating around the noodles. The dish is gently cooked until the noodles soak up the combined flavors and the sauce clings well to the strands.
The final dish offers tender beef pieces amidst slightly chewy, richly flavored noodles with a balance of savory and mildly spicy elements. It is served immediately to enjoy the sauce at its best. This preparation reflects the popular Korean street and home-cooked pairing seen in the movie Parasite.
Ingredients
- 8 ounces beef tender cut such as sirloin, ribeye, NY strip
- salt
- black pepper
- 1 tablespoon olive oil or other cooking oil
- 2 garlic cloves, roughly crushed, optional
- 1 chapagetti noodles pack, aka 짜파게티
- 1 neoguri noodles pack, aka 너구리
Instructions
- Cut the beef into bite size pieces and generously sprinkle with salt and pepper. At this point, start boiling 4 cups of water in a medium size pot.
- Heat a pan with a tablespoon of olive oil or other cooking oil. Add the meat, and cook until the bottoms are nicely seared. Turn them over, and add the optional garlic. Cook/brown all sides to the slightly less than desired doneness.
- When water boils, add the noodles and the vegetable mix from the packets and continue boiling for about 3 minutes. The noodles should be al dente at this point because they will be cooked again.
- Transfer the noodles with a strainer to the pan with the steak, reserving the water. Pour a cup of the reserved water over the noodles. Turn the heat to medium. Add the entire packet of the Chapagetti sauce and ⅗ of the Neoguri sauce (or to taste).
- Stir everything well until the sauce is evenly distributed and slightly thickens, about a minute. Add more reserved water if needed. Turn the heat off.
- Stir in the oil from Chapagetti. Serve with pickled radish or kimchi.
