Judy’s Easy Homemade Chicken Stock

Judy’s Easy Homemade Chicken Stock is made by simmering a whole chicken with ginger and scallions in cold water for several hours. This slow simmering extracts flavor and nutrients, resulting in a clear, fragrant broth. The stock is versatile for soups, sauces, and cooking grains and can be stored frozen for later use.

Description

This stock recipe combines a whole 4 to 5 pound chicken with slices of fresh ginger and scallions in a large pot filled with cold water. Bringing it to a boil and then reducing to a gentle simmer for 4 to 6 hours allows the flavors from the chicken and aromatics to infuse fully into the broth. The slow simmering extracts gelatin and flavor from bones and meat, creating a rich, savory stock.

The resulting chicken stock is clear and fragrant, with subtle warmth and depth imparted by the ginger and fresh brightness from scallions. It serves as a foundational ingredient for many dishes such as soups, stews, risottos, or sauces. The simple ingredient list keeps the flavor clean and adaptable.

Once cooled, straining removes solids leaving a clear broth. Portioning and freezing the stock allows easy access for future recipes while preserving freshness. The recipe yields about 3 to 4 quarts (approximately 3 1/2 liters), which covers many batch cooking needs and reduces waste.
