Kale Apple Salad
Description
This salad starts by sautéing sliced yellow onion in extra virgin olive oil until translucent. Thinly sliced fennel follows until softened, then sliced Fuji apple is added and warmed gently, allowing the fruit’s sweetness to meld. Finally, kale cut into thin strips is added and cooked briefly to wilt just enough while maintaining some chew.
The result is a harmonious mix of sweet onion, mild anise notes from fennel, crisp yet softened apple slices, and tender kale. The salad is seasoned with salt and black pepper to taste. Toasted walnuts sprinkled on top contribute a crunchy contrast and a rich, earthy note.
Serve this salad as a fresh, well-rounded accompaniment to main dishes or as a light standalone option. The combination of autumnal flavors and textures works well at various meals.
Ingredients
- 2 tbsp olive oil extra virgin
- ½ yellow onion sliced, or white onion
- 1 fennel bulb thinly sliced
- 1 Fuji apple cored and thinly sliced
- 1 kale cut into thin strips, bunch
- salt to taste
- black pepper to taste
- ¼ cup walnut toasted
Instructions
- Add the oil to a medium-sized skillet over medium to high heat. Let it heat.
- Add the onion and cook until they are translucent, about 2 minutes.
- Add the fennel, and cook until softened, about 3-4 minutes.
- Add the apples and toss gently, let it cook a few minutes while tossing occasionally.
- Reduce the heat, then add the kale, salt and pepper. Toss gently and let it cook until the kale has wilted a little, about 1-2 minutes.
- Sprinkle with the nuts, and serve.
