Kale, Feta and Watermelon Salad
Description
This salad pairs fresh curly kale, which is chopped and well-washed, with diced watermelon and crumbled feta cheese. The greens are dressed in a vinaigrette made from olive oil, apple cider vinegar, lemon juice, crushed garlic, and seasoning with salt and black pepper. After mixing the kale with the dressing, watermelon and feta are folded in carefully to maintain texture. Pecans are added on top for a nutty crunch.
The resulting dish offers a refreshing combination of the sweetness and juiciness of watermelon, the savory saltiness from the feta cheese, and the slight bitter chew of kale. The garlic and vinegar dressing adds brightness, while the lemon juice provides acidity to balance flavors. The pecans bring a crunchy texture that contrasts with the tender ingredients.
This salad can serve as a side dish or light meal, providing a mixture of flavors and textures suitable for warm weather or as a complement to grilled foods. Variations can be made by substituting the feta for grilled halloumi or adding herbs like fresh mint. The salad is versatile and can be adjusted to preference with additions such as olives or crisp vegetables for extra texture.
If a sweeter dressing is desired, balsamic vinegar or a drizzle of pomegranate molasses may be used instead of apple cider vinegar. Grilled watermelon can also be used to alter the flavor and texture, adding a smoky note. The components can be combined shortly before serving to keep the salad fresh and vibrant.
