Kale Pistachio Pesto

Fresh kale, pistachios and coconut oil are combined in this vegan, gluten free, healthy pistachio pesto recipe. It’s perfect with pasta, chicken or on pizza!

Ingredients

Servings
  • 1 cup pistachios shelled
  • 2 cups kale chopped
  • 3 cloves garlic
  • ½ tsp salt
  • ¼ cup coconut oil melted

Instructions

  1. Add the pistachios, kale, garlic and salt to a food processor and pulse for 15-20 seconds.
  2. Slowly pour in the coconut oil and process until combined.
