Kale Salad with Papaya Vinaigrette

Ingredients

Kale Salad

  • 1 kale bunch
  • ½ c quinoa cooked
  • ½ c red cabbage
  • ½ c cilantro
  • carrot medium, diced
  • ½ c walnuts candied

Papaya Vinaigrette

  • 1 ½ t ginger grated, fresh
  • ¼ c lime juice fresh
  • 1 oz. rice vinegar
  • 2 oz. agave nectar
  • ½ c. papaya diced
  • ½ c extra virgin olive oil

Instructions

Kale Salad

  1. wash Kale and remove the stems from the center so you're left with the leaves
  2. chop kale leaves into bite size pieces add to large salad bowl
  3. chop red cabbage into small pieces and add to kale
  4. chop cilantro and carrots and add into the kale
  5. add in quinoa to salad and toss with papaya dressing
  6. top with candied walnuts and enjoy!

Papaya Vinaigrette

  1. combine all ingredients except the olive oil in a blender and blend until smooth
  2. slowly add in oil as blender runs so that dressing emulsifies.
