Ingredients
Salad
- 2/3 cup bulgur or couscous or quinoa, fine
- 5-6 cups kale leaves about 1 large bunch or parsley, chopped
- 2 tomatoes diced (about 2 cups, ripe
- 1 onion or shallot or bunch of green onions, red, finely chopped
- 1/4 cup mint leaves or not, chopped, or parsley
- 1 cucumber if you have it, or 1/2 English cucumber
Dressing
- 1/4 cup lime juice or lemon juice
- 2 teaspoons cumin ground
- 1 teaspoon salt or to taste
- 1/2 cup extra-virgin olive oil
Instructions
- Prepare bulgur, couscous or quinoa according to package directions. Cool, then toss with remaining salad ingredients.
- Whisk together dressing ingredients, then toss with salad.
