Katharine Hepburn's Brownies
Description
These brownies begin by melting butter and unsweetened chocolate together gently, then whisking in sugar, eggs, and vanilla for a smooth, glossy batter. Flour, salt, and optional walnuts are folded in to create a thick batter that bakes to a fudgy consistency. Baking at a moderate temperature allows the brownies to set fully while maintaining moistness inside.
The walnuts provide a crunchy counterpoint to the dense, rich chocolate base. The brownies develop a slightly crisp top crust while remaining tender and moist within. Allowing them to cool completely before slicing helps achieve clean, uniform squares suitable for serving.
They can be stored at room temperature in a sealed container for several days or frozen for longer keeping. Using parchment paper and butter in the pan aids easy removal and clean edges when cutting.
Ingredients
- 1 tick (4 oz) butter plus more for buttering the pan, unsalted
- 2 ounces unsweetened chocolate
- 1 cup granulated sugar
- 2 large egg lightly beaten
- ½ teaspoon vanilla extract
- ¼ cup all-purpose flour
- ¼ teaspoon salt
- 1 cup walnuts optional, roughly chopped
Instructions
- Preheat the oven to 325°F (160°C). Butter an 8-inch square baking pan. Line the pan with parchment paper and butter the paper.
- Melt the 1 stick (4 oz) unsalted butter and 2 ounces unsweetened chocolate together in a large saucepan over low heat, stirring constantly, until combined.
- Remove the pan from the heat and stir in the 1 cup granulated sugar.
- Add the 2 large eggs and ½ teaspoon vanilla extract and stir to make a smooth batter.
- Add the ¼ cup all-purpose flour, ¼ teaspoon salt, and 1 cup roughly chopped walnuts, if using, and stir until incorporated.
- Pour the batter into the prepared baking pan and spread evenly. Bake until a toothpick inserted in the center comes out clean, 40 to 45 minutes. Let cool on a rack. Cut into squares and serve.
Notes
- Allow the brownies to cool completely before slicing to achieve clean, even squares.
- Store the brownies in an airtight container at room temperature for up to four days for best freshness.
- For extended storage, freeze the brownies and separate layers with parchment paper to prevent sticking.
