Kebab with Greek Kasseri Cheese - Kaserli

This recipe combines minced beef and lamb with spices and finely chopped onion to create Greek-style kebabs filled with grated kasseri cheese. The mixture is shaped around the cheese, then cooked in a pan or on a grill until golden and fully cooked. The kebabs are typically served wrapped in pita bread with roasted tomatoes, sliced onion, tzatziki sauce, parsley, and French fries. The cheese center adds a creamy texture contrast to the seasoned meat.

Description

Kebab with Greek Kasseri Cheese - Kaserli brings together twice-minced beef and lamb mixed with tomato paste, onion, parsley, and a blend of spices including cumin, chili flakes, fenugreek, and oregano. After chilling the mixture to firm it up, portions are shaped around grated kasseri cheese, encasing it completely to form kebabs. These undergo pan or grill cooking until the outside is golden and the meat cooked through.

The melting kasseri inside adds a gooey element that complements the savory spiced meat well, while the roasting of accompanying tomatoes and the freshness of parsley and tzatziki sauce provide balancing flavors. Serving in pita bread makes it convenient to eat, and the addition of French fries rounds out the meal.

This preparation highlights the use of a specific Greek cheese wrapped inside well-seasoned meat, making the texture and flavor more complex than a regular kebab. It suits a fuller, lightly spiced palate and a slightly creamy cheese center.

Ingredients

Servings

For kaserli kebab:

  • 500 g beef twice minced, minced
  • 500 g Minced lamb twice minced
  • 1 onion finely chopped
  • 1 tbsp tomato paste
  • 1/2 parsley finely chopped, bunch
  • 2 tsp salt
  • 2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp chili flakes
  • 1/2 tsp fenugreek
  • 1/2 tsp oregano dried
  • 300 g kasseri cheese grated

To serve:

  • pita bread used as souvlaki wraps
  • tomato roasted
  • onion sliced
  • tzatziki sauce
  • parsley
  • French Fries

Instructions

  1. In a bowl, add all the ingredients for the kebabs, except the kasseri cheese and mix them well, until the mixture is even.
  2. Cover the bowl with plastic wrap and put in the fridge for 1 hour, so that the mixture thickens.
  3. Take a portion of the mixture, press it slightly with your hands, so that it gets a rectangular shape, and put some kasseri cheese on top. Shape the minced meat around the kasseri cheese, to cover it completely and form a kebab.
  4. Repeat the same process with the rest of the mixture and pass the kebabs through skewers, unless you want to leave them as they are.
  5. Place a pan or a grill pan over medium to high heat. Once heated, add a little olive oil and cook the kebabs for 4-5 minutes on each side, until golden brown and completely cooked.
  6. Serve the kaserli kebabs with souvlaki wraps, roasted tomatoes, onion, tzatziki sauce, parsley and French fries.
