Kentucky Derby Pie
Description
Kentucky Derby Pie starts with a pie crust pressed into a pan and chilled. The filling combines packed brown sugar, flour, eggs, melted butter, bourbon, vanilla, and salt, blended thoroughly before stirring in dark chocolate chips and chopped pecans or walnuts. The filling is poured into the chilled crust and baked at 350°F on the oven's lowest rack until the center is firm and the top turns golden, which usually takes about 45 minutes.
The baked pie yields a dense, fudgy texture where the chocolate and nuts contribute richness and crunch. The bourbon adds depth without overpowering sweetness, balanced by vanilla and salt. Cooling the pie fully before serving is important for a clean slice and proper texture.
The salted caramel whipped cream topping is made by whipping heavy cream to firm peaks and folding in salted caramel sauce. This cream, drizzled with extra caramel, adds a smooth, sweet contrast to the rich pie. The pie can be enjoyed warm or at room temperature, with whipped cream served on the side or spread on top immediately before eating.
For storage, the pie without whipped cream can sit covered at room temperature up to four days; with whipped cream, refrigeration with loose covering keeps it fresh for several days.
Ingredients
For the Bourbon Derby Pie:
- 1 pie crust or refrigerated roll-out dough, homemade
- 1 cup brown sugar packed
- 1/3 cup flour
- 3 egg large
- 1 tick butter melted (1/2 cup
- 1/4 cup bourbon whiskey
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 10 ounces dark chocolate chips
- 1 cup pecans or walnuts, roughly chopped
For the Salted Caramel Whipped Cream:
- 1 1/2 cups heavy cream
- 3 tablespoons caramel sauce + extra for top, salted
Instructions
- Preheat the oven to 350 degrees F. Roll the pie crust into a circle, 3 inches wider than your pan pie, usually 12 inches to fit a 9 inch pan. Carefully move the pie crust to the pan and fit it down into the bottom. Crimp the edges. Refrigerate the crust while making the filling.
- In a large bowl, whisk the brown sugar, flour, eggs, butter, bourbon, vanilla, and salt. Stir in the chocolate chips and chopped pecans.
- Once the pie crust is very cold, pour the filling into the crust and set in the oven on the lowest rack. Bake until the center is firm, and the top is golden, about 45 minutes. Cool completely before moving on.
- When ready to serve the pie, whip the heavy cream on high until firm peaks form. Whip in the caramel sauce. Scoop the whipped cream onto the top of the pie and smooth out neatly. Drizzle the top of the pie with extra salted caramel sauce. Cut and serve.
Notes
- Kentucky Derby Pie can be stored covered at room temperature for up to four days without whipped cream to maintain texture.
- Add whipped cream only on the day of serving to preserve its texture and freshness.
- When serving warm pie, consider placing a dollop of whipped cream on individual plates instead of spreading it on the whole pie.
- Store pies with whipped cream loosely covered in the refrigerator for up to four days.
