Ketchup Fried Rice

This recipe for ketchup fried rice is a delicious fusion of flavors that is easy to make. Perfect for those busy weeknights, last minute dinner parties, or even pot lucks.

For the Sauce

  • 2 ½ tablespoons ketchup or to taste
  • 1 tablespoon soy sauce

For the Rice

  • 2 tablespoons cooking oil e.g. vegetable oil
  • 90 grams (3.17 ounces) small brown onion finely chopped
  • ½ cup (61 grams, 2.20 ounces) carrot, diced and blanched
  • 1 teaspoon minced garlic 
  • 3 cups (360 grams, 12.70 ounces) day old cooked basmati rice
  • 70 grams (2.47 ounces) frozen green peas defrosted
  • ½ cup (40 grams, 1.41 ounces) green (spring) onions finely chopped
  • salt and pepper to taste
  • 2 tablespoons sesame seeds toasted, optional to garnish
  • fried egg optional, to garnish

Instructions

For the sauce

  1. In a small bowl mix the ketchup and soy sauce. Set aside.

For the rice

  1. Heat cooking oil in a wok or deep frying pan over high heat. Once hot, add the finely chopped brown onion and carrot. Cook until the onion starts to become golden brown and carrot has softened. Then add the minced garlic. Cook for a further 1 to 2 minutes. See note 1.
  2. Add the cooked basmati rice. Break up any clumps of rice and stir through the carrot, onion, and garlic. Stir fry the rice for 3 to 4 minutes.
  3. Next, add the green peas and green onions. Toss through and cook for 1 to 2 minutes.
  4. Add the sauce and continue to stir fry for a further 3 to 4 minutes.
  5. Season with salt to taste, add more ketchup if desired. Turn off heat and serve. Garnish with toasted sesame seeds and a fried egg if desired.

Notes

  • Stir frequently to avoid burning your garlic.
