Description

These donuts rely on almond and coconut flours, along with baking powder and cinnamon for leavening and spice. Cooked chopped apple adds moisture and natural sweetness to the batter, which is lightened by blending fluffy eggs and melted butter stirred with apple cider vinegar and vanilla. The batter is poured into a greased silicone donut pan to retain shape and baked until set.

Once baked and cooled, the donuts are coated by brushing melted butter over them and rolling in a mixture of sweetener and cinnamon, providing a contrasting crunchy, flavorful exterior. The optional spices like ginger, nutmeg, allspice, and cardamom can be added for deeper complexity.

Batter - dry ingredients

  • 1 cup almond flour 100g
  • ¼ cup coconut flour 30g
  • 1 ½ tsp baking powder
  • 2 teaspoon cinnamon optional add-ons: see notes
  • ¼ cup granulated sweetener white or golden, 50g

Batter - wet ingredients

  • 3 egg large, room temperature
  • cup butter melted, 75g
  • 2 tablespoon apple cider vinegar
  • 1 apple 125g, measured after it is peeled, cored and chopped (circa 1 cup chopped)
  • 1 teaspoon vanilla extract

Coating

  • 2 tbsp butter melted
  • ¼ cup granulated sweetener white or golden, 50g
  • 1-2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 180 C / 160 Celsius Fan / 350 F. Grease a silicone donut pan with melted butter or oil.
  2. Peel the apple and chop it into small pieces. Put these in a bowl, cover and cook in a microwave until soft (mine took 4 minutes at 900W). Alternatively, simmer on the stove with a splash of water until very soft. ***see recipe notes
  3. In a food processor or high speed blender, blend the eggs until fluffy, pale in colour and double the size.
  4. Add the melted butter, sweetener, apple cider vinegar, vanilla extract and cooked apple and blend.
  5. Now add all remaining dry ingredients - almond flour, coconut flour, spices and baking powder. Blend until a smooth batter.
  6. Fill into the prepared donut pan. Don't over-fill or you'll lose the hole! Bake for 14 minutes.
  7. Let the donuts cool completely before removing from the pan.
  8. Mix together the "cinnamon sugar" mixture. Brush the donuts lightly with melted butter and roll in the mixture until coated all over.

Notes

  • Net carbs count approximately 1.9 grams per donut, with a total yield of 16 donuts.
  • Cook apples until soft, either by microwaving or simmering, and puree if you don’t have a high-speed blender to avoid chunks.
  • Optional warm spices such as ginger, nutmeg, allspice, and cardamom enhance flavor but are not required.
  • Use a silicone donut mold for best baking results and easy removal.
